½ cup unsalted butter
¼ cup sugar
5 tbsp. cocoa powder
1 ¼ cups graham cracker crumbs
1 cup shredded coconut
½ cup unsalted butter
2 Tbsp. and 2 Tsp. heavy cream (35%)
2 Tbsp. vanilla custard/pudding powder
2 cups icing sugar
4 ounces semi sweet chocolate
2 ounces butter
1.5 ounces white chocolate
1 ounce heavy cream (35%)
Using a double boiler heat the butter, sugar, and cocoa powder for the bottom layer.
Whisk the egg until smooth in a separate bowl. Add a little bit of the hot butter/sugar mixture to the egg making sure to whisk while adding to temper the egg and avoid lumps. Once the egg has been brought up to temperature add the egg to the butter/sugar mixture and return to the double boiler for a couple mins.
Once cooked remove from the heat and add the gram cracker crumbs and coconut.
Press the bottom layer into an unlined 8 x 8 inch pan.
To make the middle layer cream the butter, vanilla custard/pudding powder, and heavy cream together. Once mixed add the icing sugar 1 cup at a time and beat until smooth.
Add the middle layer on top of the bottom layer and spread evenly.
Melt the semi sweet chocolate and butter together and evenly pour over the middle layer.
Heat the cream and add it to the white chocolate while stirring to make a ganache.
Pour the white chocolate ganache over the top layer and use a toothpick to make swirls in the chocolate.
Refrigerate until cool and set. Remove from the fridge and let warm a little before cutting and trying to remove from the pan cold
